IMO Hoss' character changed the most over the years, instead of being the big, ole, dumb, ox that maybe was envisaged by the PTB.

Dan Blocker honed Hoss into a sensitive, thoughtful person.
Hand in hand with nature, with no mind to harm a living crittur, unless it was to protect his own family - though sometimes even against themselves or to come to the aid of any defenseless being, human or animal.
Hoss became and was the strength of the Ponderosa.
